Fast Paced Plant Based – Mitch’s Kitchen Review (ad)

We are all guilty of coming home after a long day at work and not bothering to make a nutritious meal for our tea. Sometimes it’s all too tempting to grab something on the way home, pop some cereal in a bowl or even just skip it when you’re sleepy and using all your energy to focus on the latest Eastenders drama! Anyway, there’s something out there to save us all, to turn us into those organised, prepared and health conscious people we desire to be, and that something is Mitch’s Kitchen.

Created, cooked and ran by a couple from the South coast, Mitch’s Kitchen has crowned the slogan ‘Fast paced, plant based’. That pretty much says it all, they’re a plant based prepared meal service, delivered straight to your door. All meals are 100% vegan and free from gluten, nuts, palm oil and pesticides. I love cooking fresh and ensuring my ingredients are ethical and nutritious but a service like this just takes away all the stress and is an absolute saviour.

They currently have eight meals to choose from, at £6.75 each, you pick your favourites and they’re delivered straight to your door in a box, keeping everything cold and all you need to do is take them from the freezer to the microwave and ten minutes later, tuck in and feet up! Mitch ever so kindly sent me six meals and I tried my favourite three and will tell you a little about them below!

Buckwheat Jambalaya

“Rainbow peppers, smoked paprika, marinated tempeh chorizo, sweet saffron and cayenne spice in a hearty buckwheat bowl. All blended together with rich tomatoes, a squeeze of lemon and fresh herbs.”

Ingredients List:
Buckwheat, Water, White onions, Chopped tomatoes, Tempeh (Soya), Kidney beans, Butter beans, Mixed peppers, Lemon, White wine, Carrot, Celery, Lemon (Juice), Olive oil, Vegetable bouillon, Rapeseed oil, Garlic, Smoked paprika, Flat leaf parsley, Tamari (Soya), Smoked paprika, Maple syrup, Cumin seeds, Dried oregano, Dried thyme leaves, Sea salt, Garlic powder, Ground cumin, Coriander, Cayenne pepper, Pepper, Bay leaves, Chilli powder, Saffron.

The buckwheat jambalaya was so tasty – this is a really me kind of hearty meal. I love a buckwheat base with tons of veggies and this suited me so perfectly!

Chocolate Chilli

Warming and wholesome: A silky dark chocolate rich and smokey tomato sauce, chunks of roasted sweet potato, cinnamon, dried chilli, diced chestnut mushrooms, chopped rainbow peppers, with a mix of borlotti, black and kidney beans on a bed of our sweetcorn and coriander wholegrain brown rice.

Ingredients:
Water, Chopped tomatoes, Whole grain brown rice, Red kidney beans, Borlotti beans, Black beans, Sweet potato, Mixed peppers, Brown mushrooms, Red onions, Dark chocolate [Cocoa mass, cocoa butter, sugar, emulsifier: sunflower lecithin], Sweetcorn, Balsamic vinegar, Smoked paprika, Coconut palm sugar, Rapeseed oil, Garlic, Mixed dried herbs [Oregano, thyme, basil, coriander], Salt, cumin, Ground coriander, Cinnamon, Red chilli, Salt, Chilli Powder, Black Pepper.

I’ve seen chocolate added to chilli a few times before but was yet to try it for myself and I must say, it totally works! I love a good chilli whether it’s with or without meat. I added some spinach and a warmed up tortilla wrap to wipe up those last bits!

Sunkissed Pasta

Indulgent and delicious. Brown rice pasta, artichoke hearts, butter beans, cavelo nero kale and fruity kalamata olives dressed in a rich sweet potato and sun-dried tomato sauce. Finished with a sprinkle of our sunflower seed parmesan.

Ingredients:
Sweet potato, Brown rice pasta, Water, Unsweetened soya milk, Canellini beans, Butter beans, Olives, Artichokes, Sun-dried tomatoes, Spinach, Cavelo nero, Sunflower seeds, Lemon juice, Balsamic vinegar, Nutritional yeast, Hemp oil, Apple Cider vinegar, Garlic, Sea salt, Dried basil, Dried oregano, Black pepper, Garlic powder.

What is better than sitting down for a bowl of pasta knowing it’s healthy and full of goodness? I chucked in some spinach, tomatoes and some spring onions and pine nuts on top just because I fancied it but it was all delicious!
